Preheat your oven to 325°F (163°C) to ensure even baking. -
Mix Wet Ingredients:
In a large bowl, whisk together the cooking oil, sugar, and eggs until smooth and slightly thickened. -
Prepare Dry Ingredients:
In another bowl, sift together the flour, baking soda, cinnamon, and sea salt. -
Combine Wet & Dry:
Gradually add the dry ingredients to the wet mixture, stirring gently to combine without overmixing. Add the vanilla extract and mix well. -
Fold in Apples & Pecans:
Gently fold the diced apples and chopped pecans into the batter, distributing them evenly. -
Prepare Baking Pan:
Grease and flour a tube pan or two loaf pans to prevent sticking. Pour the batter evenly into the pan(s). -
Bake:
Bake for about 1 hour. Check for doneness by inserting a toothpick into the center after 50 minutes. If it comes out clean or with a few crumbs, the cake is done. Loaf pans may bake faster, so check accordingly.
